Cashew Cranberry No-Bake Cookie Bites

You may have noticed I’ve been away from the blog for a while.  Over 3 months to be exact (gasp!), that is criminal!!  Well, not really, it’s been for a great cause!  I have been hard at work on my Nutritional Therapy Consultant certification program and I am two weeks – TWO WEEKS! – away from taking my final exam!  I was really hoping to keep my blog up to date as I went through the program, but priorities prevailed and blogging just had to take a back seat.   Continue reading

Lemony Kale with Bacon

Fact:  I am not a chef.  Not even close.  I usually just throw some stuff in a pan, cross my fingers, and hope it doesn’t burn (which it usually does).  However, this lemony kale experiment happened to only burn a little turn out super good and it was super simple, so I just had to share it with you guys!  This would make a great side dish for just about any meal – or if you’re like me, you just eat a huge bowl of it and call it dinner.   Continue reading
